![]() 4 egg whites, 2 tbsp. cornstarch, 2 tbsp. cocoa powder, 2/3 cup sugar, 9 oz. dark chocolate, 1 tbsp. butter Preheat oven to 350 degrees Fahrenheit. Using an electric mixer, beat the egg whites until white and foamy. Add the cornstarch, cocoa powder, and sugar and continue beating until thickened and forming stiff peaks. Melt the chocolate and butter in a double boiler or in a microwave, and using a plastic spatula, pour in to the egg whites. Whip the chocolate with the egg whites; the mixture will suddenly become very thick and will resemble icing. Stop beating, and make sure all the chocolate is mixed with the egg whites. Line a baking sheet with baking parchment, and spoon heaped teaspoon sized amounts of batter. Make sure there's space between the batter because the cookies with spread out during baking.
