![]() 1/2 cup chilled coconut oil, 2/3 cup sugar, 3 tbsp. honey, 2 tbsp. coarsely chopped grapefruit zest, 1 tbsp. fresh grapefruit juice, 2 cups all purpose flour, 1 tsp. baking powder, 3 eggs, 2 tbsp. water, 1/3 cup chocolate chips, pinch of salt, 1 tsp. vanilla, coconut, rum, almond or brandy extract (pick your own flavour; I used vanilla but any flavouring could work depending on your taste) Preheat oven to 350 degrees Fahrenheit and grease 2 muffin tins. Cream coconut oil and sugar together until smooth. Add eggs, one by one, mixing well after each addition (if mixture curdles a bit or separates, add some flour to the mixture). Add honey, salt, water, grapefruit zest and juice, and flavouring. Gently fold in flour and baking powder. Stir in chocolate chips and pour batter in to muffin tins to bake for approximately 20-25 minutes. When toothpick inserted comes out clean, the muffins are done. -Gabriella Hall |
